Using Leftovers……Stale Bread

The Meatloaf Mummy

I love meatloaf on a cool and rainy fall evening – maybe with some lovely mashed potatoes and garlicky green beans. I was looking for something new for my meatloaf and found this idea on Pinterest and thought I’d give it a go. My stale loaf of french bread from last week transformed into the bread crumbs for this ghoulish supper.

Ingredients:

  • 1 tbsp olive oil
  • 1 large brown onion, minced
  • 1 clove garlic, crushed
  • 3 T ketchup
  • 2 T brown sugar
  • 1 t cayenne pepper
  • 1 t black pepper
  • 1 T white wine vinegar
  • 2 lb ground beef
  • 1 1/2 C soft breadcrumbs
  • 30g grated parmesan
  • 1 T kosher salt
  • 2 eggs
  • 1 sheet frozen puff pastry (thawed in the refrigerator)
  • 1 hazelnut – halved
  • 1 egg

Instructions:

  1. Preheat the oven to 360°F.
  2. Fry the minced onion until soft. Add the garlic and continue to cook for an additional minute.
  3. Add the ketchup, sugar breadcrumbs, parmesan and seasonings to the ground beef in a bowl.
  4. Add cooled onions and garlic, then the eggs and mix thoroughly.
  5. Spread out the puff pastry rectangle and cut it into strips.
  6. Whisk the remaining egg with a little water (`1 teaspoon) to make a wash.
  7. Lay the strips on a parchment lined baking tray. Shape the mix into a mummy shape and fold the puff pastry strips over it, adding egg wash where the strips overlap. Leave a little bit of the head exposed – stick the hazelnuts for the eyes.
  8. Brush the pastry with the remaining wash and bake for 40-50 minutes or until fully cooked.
