Cocoa Brownies

Ingredients

  • 4 eggs
  • 1 1/4 c dutch processed cocoa
  • 1 t salt
  • 1 t baking powder
  • 1 t instant coffee powder
  • 1 T vanilla extract
  • 1 c unsalted butter
  • 2 1/4 c sugar
  • 1 1/2 c AP flour
  • 1 c chocolate chips
  • 1/2 c walnuts

Instructions

  1. Preheat the oven to 350°F.
  2. Grease a 9″ x 13″ pan and add parchment
  3. Beat 4 eggs at medium speed. Add the cocoa, salt, baking powder, coffee and vanilla and mix until smooth.
  4. Melt the butter, then add the sugar and stir to dissolve.
  5. Slowly add the butter-sugar mixture into the egg-cocoa mix, stirring until smooth.
  1. Add the flour, nuts and chips, stirring until smooth. Again, adding the chips helps produce a shiny top crust.
  2. Spoon the batter into a lightly greased 9″ x 13″ pan.
  3. Bake the brownies for 28 to 32 minutes, until a toothpick inserted into the center comes out clean, or with just a few moist crumbs clinging to it. The brownies should feel set on the edges, and the center should look very moist, but not uncooked. Remove them from the oven and cool on a rack before cutting and serving.
  4. Stir in the flour and chocolate chips and spoon into the pan.
  5. Bake for 28 – 32 minutes or until a toothpick comes out clean. Cool them on a rack before cutting.
