Scalloped Potatoes

Ingredients

  • ¼ cup butter
  • 1 large onion – diced
  • 2 cloves garlic – minced
  • ¼ cup flour
  • 2 cups whole milk
  • 1 cup chicken broth
  • ½ teaspoon kosher salt
  • ¼ teaspoon pepper
  • 3 lbs potatoes – sliced about ⅛” thick

Instructions

Sauce
  1. Preheat the oven to 350˚F.
  2. Melt the butter over medium low heat. Add the onion and garlic and continue to cook until it is softened.
  3. Add the flour and cook for 1-2 minutes. 
  4. Reduce heat to low and add the milk and broth a little at a time, whisking to prevent lumps. As the mixture begins to reach the boil, it will thicken.
  5. Stir in salt and pepper and heat an additional minute.
Potatoes
  • Butter a 9″x13″ baking dish.
  • Layer in a third of the potato slices and season them with with salt and pepper.
  • Pour a third of the cream sauce sauce over that layer. 
  • Repeat layers finishing with a layer of cream sauce. 
  • Cover and bake for 45 minutes.
  • Uncover and bake for an additional 35-45 minutes until golden brown and potatoes are tender when a knife is inserted.
  • Broil for 3-4 minutes to obtain a golden top.
  • Allow to rest for 10-15 minutes before serving.
