Using Leftovers …. Mashed Potatoes (2)

Lefse

Ingredients

  • 2 cups of cold mashed potatoes
  • 2 T butter
  • 3/4 T sugar
  • 1 ½ cups flour

Instructions

  1. Mix the above ingredients together in a stand mixer until it comes together in a ball.
  2. Chill until ready to roll.
  3. Preheat the lefse griddle to 450 F.
  4. Use a floured surface to roll out dough.
  5. Roll nice and thin – you should see light through it.
  6. Move the round to the griddle with a lefse stick
  7. Cook until light brown spots form, then flip and cook the other side.
  8. Remove lefse and layer and cover on a towel to cool.
