Peach Bread Pudding

Ingredients

  • 8 cups sourdough bread – cubed
  • 3 Eggs
  • 1 1/2 cup Sugar
  • 3 T Butter – melted
  • 1 cup milk
  • 1/2 cup lemon curd yogurt
  • 1/2 cup vanilla yogurt
  • 1 t kosher salt
  • 1 tsp cinnamon
  • 2 pints canned Peaches – diced
  • ½ cup Pecans – Chopped
  • Topping
    • 2Tbsp sugar
    • 1 t cinnamon

Instructions

  1. Preheat oven to 350°.
  2. Liberally butter a 9×13″ baking dish.
  3. Mix together the sugar and cinnamon for the topping and set aside.
  4. In a large bowl, beat 3 eggs along with the sugar, then add the melted butter, yogurt, salt, cinnamon and milk.
  5. Stir in the peaches and bread, mixing well and allowing it to soak for 30 minutes.
  6. Pour the mixture into the baking dish, and sprinkle with cinnamon sugar mixture. Cover it loosely with buttered foil and bake for 20 minutes.
  7. Remove the foil, sprinkle the pecans over it and bake 25-30 minutes until the top is golden and the center is set.
