
Ingredients
- 8 cups sourdough bread – cubed
- 3 Eggs
- 1 1/2 cup Sugar
- 3 T Butter – melted
- 1 cup milk
- 1/2 cup lemon curd yogurt
- 1/2 cup vanilla yogurt
- 1 t kosher salt
- 1 tsp cinnamon
- 2 pints canned Peaches – diced
- ½ cup Pecans – Chopped
- Topping
- 2Tbsp sugar
- 1 t cinnamon
Instructions
- Preheat oven to 350°.
- Liberally butter a 9×13″ baking dish.
- Mix together the sugar and cinnamon for the topping and set aside.
- In a large bowl, beat 3 eggs along with the sugar, then add the melted butter, yogurt, salt, cinnamon and milk.
- Stir in the peaches and bread, mixing well and allowing it to soak for 30 minutes.
- Pour the mixture into the baking dish, and sprinkle with cinnamon sugar mixture. Cover it loosely with buttered foil and bake for 20 minutes.
- Remove the foil, sprinkle the pecans over it and bake 25-30 minutes until the top is golden and the center is set.
